Cranberry Bread

This is a simple and easy recipe that looks and tastes great.
  • 2 cups all-purpose flour
  • 2 cups whole wheat flour
  • 2 cups sugar
  • 3 teaspoons baking powder
  • 2 teaspoons salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter or margarine
  • 2 eggs, beaten
  • 2 teaspoons grated orange peel
  • 1 1/2 cups orange juice
  • 3 cups fresh or frozen cranberries, chopped

Sift flour, sugar, baking powder, salt, and baking soda into a large bowl. Cut in butter until mixture is crumbly. Add egg, orange peel, and orange juice all at once; stir just until mixture is evenly moist. Fold in cranberries.
Pour into a greased 9 x 13 inch pan. Bake at 350oF for 1 hour and 10 minutes, or until a knife poked into the center comes out clean.
